Healthy Tomato Lunch

 

Serves 2
Ingredients
150gs Arborio Rice
600ml Chicken Stock
1 Onion Chopped
Mixed Cherry Tomatoes
2 Courgettes
Italian mixed spice
20g grated parmesan

Method

  1. Fry onion in frylight for 10 minutes
  2. Add in courgettes and fry for 2 minutes
  3. Place rice and spice into a pan
  4. Gradually add the stock allowing the rice to absorb for about 20 minutes
  5. Add in tomatoes and stir
  6. Sprinkle over parmesan cheese and stir to give a creamy texture
