Ingredients
150gs Arborio Rice
600ml Chicken Stock
1 Onion Chopped
Mixed Cherry Tomatoes
2 Courgettes
Italian mixed spice
20g grated parmesan
Method
- Fry onion in frylight for 10 minutes
- Add in courgettes and fry for 2 minutes
- Place rice and spice into a pan
- Gradually add the stock allowing the rice to absorb for about 20 minutes
- Add in tomatoes and stir
- Sprinkle over parmesan cheese and stir to give a creamy texture
