Sweet Potato & Oats Brownies
Ingredients
1 medium sweet Potato
100g Flahavans Oats
100g ground almonds
80g Cocoa powder
1tsp baking powder
50g chopped almonds
4 tbsp. skinny food maple syrup
2 tbsp. coconut oil
1 beaten egg
200g pitted dates
1 drop of vanilla Extract
For the Icing
40g quark
100g icing sugar
1 drop of vanilla extract
Method
- Pre heat oven to 180
- Peel & cut sweet potato into chunks and boil for 20 minutes
- Blitz the oats in processor and add in ground almonds, baking powder and nuts
- Separately mix the coconut oil, maple syrup , egg and vanilla extract in a bowl
- Blend the dates and cooled down sweet potatoes in a processor
- Mix all ingredients together and place into a lined tin and cook for 35 minutes at 180
- Lower the temperature to 140 and bake for a further 20 minutes
- Allow to cool
- For the icing mix all ingredients together and brush on top of brownie , sprinkle some nuts on top and cut in squares
Even the boys love these brownies and we don’t even tell them they are made with Oats and sweet potato !!!
