Stuffed Peppers

This is a great way to use up the left overs from the Cajun Beef


1 red pepper

1 yellow pepper

20g Mozzarella

Use leftovers from Cajun Beef


Remove top and seeds from each pepper

Spoon in remaining Cajun Beef

Cook in oven at 180 for 20 mins

Take out and add mozzarella to the top and cook for a further 10 minutes

Serve with rocket salad
