Ham and Mushroom Egg Muffin

These muffins are great for on the go snacks

Ingredients

8 Eggs

Leftover Ham

50ml Skimmed Milk

10 mushrooms chopped

2 Spring Onions Chopped

Sprinkle of Cheese

Method

Fry mushrooms for 10 minutes then add spring onions..

Add ham to mixture..
Mix 8 eggs and 50 mls skimmed milk and season with salt and pepper.
Line muffin cases with ham, mushroom and onion mixture & pour egg over.

Sprinkle cheese on top and place in a preheated oven at 180 for 25 minutes.
