Chicken Chickpea and Coconut Curry

4 chicken breasts
1 onion
1 red pepper
1 red chilli
3 garlic cloves
2 tsp coriander
2 tsp cumin
2 tsp tumeric
150ml chicken stock
1 tin of tomatoes
1 tin of chickpeas
1 tin of light coconut milk
Handful of spinach

Fry off onion and pepper until soft
Add chill , garlic and giner and cook for one minute
Add chicken and cook until brown
Stir in rest of spices and cook for another minute
Add stock , tomatoes and chickpeas and mix well
Bring to boil and then cover and simmer for 15 minutes
Add veg of your choice and cook for a further 10 minutes until chicken is fully cooked
Stir in coconut milk and spinach
Serve with boiled rice
