Ingredients
1 Cauliflower
Frylight
Juice of 2 lemons
Sundried tomatoes
60g olives
1 egg (beaten)
40g parmesan cheese
1/2 tsp oregano
Sliced pepperoni
100g Mozzarella
Basil to Serve
Method
Preheat oven to 220
Line a baking tray with grease proof paper
Blitz the cauliflower in a food processor
Spray a pan with frylight and heat up cauliflower for 6-8 minutes or until slightly brown
Remove and leave to cool
Mix sundried tomatoes lemon juice and olives together
Stir egg , parmesan and half the mozzarella into cauliflower mix , spread onto baking tray in a round shape
Bake for 12 minutes or until brown
Add the sliced pepperoni and toppings and bake for a further 10 minutes
Serve with basil on top and some drizzled oil .
