Cajun Beef with Red Rice

Ingredients

200g red rice

500g 5% Fat Mince beef

1 red pepper

1 yellow pepper

1 carrot

2 tsp cajun spice

1 tsp paprika

1/2 tsb cayenne pepper

1tbsp worcestershire sauce

1 red onion

1 white onion

200g mushrooms

100g tomatoes

200ml beef stock

1 beef stock cube

Spring onions

Method

Cook red rice according to pack, Note red rice can take a little longer between 30-40 minutes

Dice all veg

Spray pan with frylight

Add onions to pan and fry for 5 mins

Add mince to pan and fry for a further 5 minutes

Add in remaining veg, spices and 200 ml stock

Crumble stock cube on top and stir and simmer for 20 mins

Add red rice to pan and stir in for 2 minutes

Top with chopped spring onions

Serve with fresh spinach
