Broccoli Pesto & Prawn Linguine

A much healthier Pesto !!!


300g dried linguine

300g cooked jumbo prawns

350g broccoli florets

50g fresh basil

120g fresh parmesan grated

2 garlic cloves crushed

¼ tsp chilli flakes

1 tbsp lemon juice

75ml vegetable stock

200g cherry tomatoes



1)Cook the linguine adding the prawns to the water for the final minute of cooking .

2)Boil up the broccoli for 6-8 minutes and drain

3)Transfer broccoli to a processor with the basil 90gs of parmesan, garlic, chilli flakes lemon juice and stock and blend.

4)Drain the pasta and return to a pan with prawns tomatoes and broccoli pesto

5)Stir well to combine and top with basil leave and remaining parmesan .
