Blueberry Muffins with a Twist , some great hidden fruit and fibre in there
2 mashed ripe bananas
125g plain flour
75g wholemeal flour
200g porridge oats blitzed in nutri bullet
75g coconut sugar
250mls skimmed milk
2 large eggs separated
3 tbsp melted coconut oil
3 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
Preheat oven to 200 degrees.
Combine all dry ingredients together and create a well in the centre.
Add mashed banana, eggs yolks,milk & coconut oil. Mix well until a wet batter forms.
Whisk the egg whites until soft peaks and fold in gently until mixed evenly.
Divide into 12 muffin cases and bake for 25-30 minutes until golden brown..
